Marina's Pecan Balls

 

(my sister-in-law's delicious recipe.  This recipe can easily be reduced in 
size for less cookies) 

 

2 c softened margarine or butter

 

1 c icing sugar

 

4 1/2 c flour

 

2 c ground pecans (or walnuts or almonds)

 

4 t vanilla 

 

Combine all ingredients in a bowl.  Mix by hand until dough holds together.  
Roll into 1" balls, place on ungreased cookie sheets.  Bake at 350 degrees

for about 25 minutes.  When cookies come out of the oven, immediately roll 
cookies in icing sugar until covered.  Cool.  Makes about 6 dozen.  Freeze 
well.  

 

PECAN CRESCENTS  (Variations on above recipe)

 

(same as above, but less quantity, so increase if you want more cookies) 

 

1/2 c butter

 

1/4 c icing sugar

 

1 c flour

 

1/2 c ground pecans (or walnuts or almonds)

 

1 t vanilla 

 

Combine all ingredients in a bowl.  Mix by hand until dough holds together.  
Take 1 Tablespoon and roll into a 3" log.  Place on ungreased cookie sheet

and curve into a crescent shape.  Place 1" apart.  Bake at 375 degrees for 10 
minutes, until set but not browned.  Roll cookies in icing sugar immediately

after baking.  Sprinkle again with icing sugar before serving.  Makes 1 1/2 - 2 
dozen. 

 

* Instead of rolling cookies in icing sugar - take cookies out of oven and let 
cool.  When cool, dip one end of cookie into melted chocolate, or drizzle

chocolate over top of cookie.  Chill to set chocolate.
