Pecan Sandies, prep 40 minutes bake 20-25 minutes per batch: Makes about 4 dozen:
I made these using my cookie scooper and only got about 18 cookies ½ cup pecans or wallnuts 1/4 cup powdered sugar 6 tablespoons butter cut up (no substitutions) 1 teaspoon vanilla 1 cup all purpose flour Preheat oven to 300 In food processor with knife blade attached blend nuts with ¼ cup powdered sugar until nuts are very finely ground Add butter and vanilla pulse until butter is incorporated Add flour and pulse just until evenly moistened Turn mixture onto work surface press dough together Drop by level teaspoons 1 inch apart onto ungreased cookie sheet Bake 20-25 minutes until lightly brown Cool cookies on cookie sheet on rack 2 minutes Place powdered sugar into medium bowl while still warm gently roll cookies one at a time in sugar to coat Then place on rack to cool completely, when cooled gently roll cookies in sugar again they do not spread during baking love lightens all difficulties and sweetens all bitterness. --- St. Francis --- Scanned by the Barracuda Spam Firewall at CPWS Broadband _______________________________________________ Cookinginthedark mailing list [email protected] http://acbradio.org/mailman/listinfo/cookinginthedark
