Gooey Mixed-Nut Bars
Nonstick cooking spray 1/2 cup butter 1 pkg 2- layer - size yellow cake mix 4 eggs, lightly beaten 1 cup packed brown sugar 1/2 cup light-color corn syrup 1/3 cup butter, melted 1 tsp vanilla 1/2 tsp ground cinnamon 2 cups mixed nuts, coarsely chopped Preheat the oven to 350 F. Line a 13 x 9 inch baking pan with foil. Extend the foil over the pan edges. Coat the foil with nonstick cooking spray. Set aside. In a large bowl, use a pastry blender to cut the 1/2 cup butter into the dry cake mix until the mixture resembles coarse crumbs. Press the mixture evenly onto the bottom of the prepared pan. Bake in the preheated oven for 15 to 20 minutes or until lightly browned and set. Meanwhile, in a large bowl, combine the eggs, brown sugar, corn syrup, the 1/3 cup of melted butter, vanilla, and the cinnamon. Whisk to combine. Stir in the mixed nuts. Pour the nut mixture over the warm crust. Bake about 30 minutes more or until bubbly around the edges and golden brown. Cool in the pan on a wire rack. Using the edges of the foil, lift the uncut bars out of the pan. Cut into bars.
