Gooey Chocolate Cashew Bars

Cashews & rich dark chocolate top shortbread crust in this easy-to-make bar.

 

Crust:

1 1/2 c all-purpose flour 

1/2 c Land O Lakes® Butter, softened 

1/4 c firmly packed brown sugar 

Topping:

3/4 c sugar 

3/4 c dark corn syrup 

3 eggs, slightly beaten 

3 tbsp Land O Lakes® Butter, melted 

2 tsp vanilla 

1 1/2 c salted cashews, coarsely chopped 

1 1/2 c real semi-sweet chocolate chips

 

Heat oven to 350°F. Combine all crust ingredients in sm bowl. Beat at low, 
scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture

onto bottom of ungreased 13"x9" baking pan. Bake 15 min or until edges are 
lightly browned. Meanwhile, stir together sugar, corn syrup, eggs, 3 tbsp butter

& vanilla in lg bowl. Stir in cashews & chocolate chips. Spread topping over 
hot, partially baked crust. Continue baking 28-33 min or until set. Cool 
completely.

Cut into bars. Cover; store refrigerated.

36 (1 bar) servings

Tip: If using dark pan, adjust crust baking time to 12 min & filling baking 
time to 25 min.
