How about using a vegetable peeler? You can make neat-looking carrot curls with one of those.

YOu can use the slicing blade of a food processor to thinly slice cucumbers, onions, etc., and then cut these slices into thin julienne strips.

A mandolin is supposed to be wonderful, but I have never used one of these.
