Greek Chicken Crockpot Pita Filling

 

Serve this easy crockpot sandwich filling in pita breads, topped with

chopped vegetables like onion and cucumber and sour cream or yogurt.



1 onion, chopped

1 lb. boneless, skinless chicken thighs

1 tsp. lemon pepper seasoning

1/2 tsp. dried oregano leaves

1/2 cup yogurt

 

Combine all ingredients except yogurt in 4-6 quart crockpot and mix

well. Cover crockpot and cook on low setting for 6-8 hours.

Just before serving, remove chicken from crockpot and shred with two

forks. Stir shredded chicken back into crockpot and stir in yogurt. Make

sandwiches with chicken and onion filling and pita breads.
