Coconut Raisin Oatmeal Cookie Here is one that I changed from your site using quinoa. My health food store clerk didn't know what quinoa was. These are good also.
1 cup butter softened 2 eggs 1 12-oz can frozen apple juice defrosted 2 Tbs vanilla 2 cups favorite flour 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp pumpkin pie spice 3 cups rolled oats 1 cup raisins 1 cup shredded coconut (These usually have sugar in them. I haven't tried to buy it at the health food store.) Cream butter in a bowl. Add eggs and vanilla; mix well. Add defrosted apple juice and mix. Combine flour. baking soda, cinnamon and pumpkin pie spices. Add to liquid mixture. Stir in oats and raisins. Mix well. Drop by rounded tablespoons on ungreased cookie sheet. Bake at 350F for 10-15 minutes until light golden brown on edges.
