Sausage Cheese Squares
Yield: 150 Pieces

     2 lb Mild or hot Italian sausage
     1 lg Onion; finely chopped
     2    Cloves garlic; pressed or minced
   1/4 lb Mushrooms; sliced
   1/2 ts Dry basil
   1/2 ts Dry mint
   1/2 ts Oregano
   1/4 c  Parsley; chopped
     8    Eggs
   1/3 c  Fine dry bread crumbs
   1/4 c  Parmesan cheese; grated
     4 c  Mozzarella cheese; shredded
          -(about 1 lb)

 Remove casings from sausages and crumble meat into a
10- to 12-inch frrying pan. Stir over medium-high heat until browned. Drain off and discard all but 2 tablespoons fat. Add onion, garlic, mushrooms, basil, mint, oregano, and parsley; stir until limp. Beat eggs to blend. Stir in bread crumbs, Parmesan cheese,
mozzarella, and sausage mixture; spread out evenly in a 10x15-inch
baking pan.  Bake in a 325 degree F. oven until mixture is firm in center
when touched 30 to 35 minutes.  Let cool; cut into 1-inch squares to
make 150 pieces.
Note: This can be served as an entree (serve hot) and
will make 9 main dish servings.
