British Irish Honey Baked Root Vegetables
Ingredients
2 tablespoons honey
1 tablespoon butter, melted
1 pound carrots cut into 4 x 1/2-inch sticks
1 small rutabaga (about 1 pound), cut into 4 x 1/2-inch sticks
Preparation
Combine honey and butter in a large bowl; stir well. Add carrot and
rutabaga; toss to coat vegetables.
Arrange the vegetables in a single layer in a 15 x 10-inch jelly-roll
pan coated with cooking spray. Bake at 375° for 1 hour or until the
vegetables are tender, stirring occasionally.
Note: Substitute "squeeze" or liquid butter for the melted butter, if
desired.
Yield: 4 servings (serving size 1 cup)
