You're probably right, but I seem to remember emersion blender demos where the milk was whirled at such a high speed that it reached cream consistency.

As far as I know you can't make whipped cream without milk. It's not exactly milk that you are actually using. It's heavy whipping cream. I wouldn't think that you could do the same thing with just regular milk that you can drink because the consistency wouldn't be the same.
