You could use whatever you like.  I like spice, so I like JalapeƱo peppers.

MEXICAN CORNBREAD

1 Jiffy cornbread mix

1 can creamed corn

1 chopped onion

1 chopped pepper

2 beaten eggs

1/2 c. cooking oil

1/2 tsp. salt

3/4 c. milk

2 c. grated cheese

Mix all ingredients together but cheese. Bake at 350 degrees for 35 minutes.
Remove

from oven and cover with cheese. Bake 10 more minutes.  Enjoy.
