Hi List, My husband and I eat steel cut oatmeal every morning. We try to keep it real healthy. I love oatmeal but I am getting to the point where I would prefer something else or prefer the oatmeal in a different form. I love this crock pot recipe but I want to know how I can turn it into a cookie. I won't feel so guilty if I'm eating a healthy, no sugar added, cookie.
The ingredients I use in this recipe are as follows: 2 cups steel cut oats. 2 cups unsweetened apple sauce. 5 1/2 cups water. 1 12 oz. can evaporated milk pumpkin pie spice or cinnamon and sometimes I throw a cinnamon stick in. and when I dish it up I usually sprinkle it with flax meal and put blueberries in it. Can you tell we like our fiber? If anyone can suggest a way I can actually turn this into cookie form, I would greatly appreciate it. Or if that is not possible, maybe some of you have healthy, fiber filled, cookie recipes you would like to pass on to me. Hopefully this isn't too much of an odd request.
