Scrambled eggs. The basic recipe is to break the eggs in a mixing bowl. Add just enough milk or water to help blend, then beat with a fork. Add salt, pepper, maybe grated cheddar cheese, chopped green peppers, black olives, spinach, mushrooms. Melt about a tablespoon of butter in a medium sized frying pan. When the butter is all melted and spread around the bottom of the pan. add the eggs. Stir gently with a fork or nonstick tool until the eggs are firm. Serve immediately. Your side dish could be ham, bacon or sausage. You could also crumble the meat and add to the scrambled eggs. Buttered toast with marmalade or hash brown potatoes are also good side dishes. So are muffins, pancakes, waffles or sweet rolls.
