Ummm, I'm sorry if I sound like an idiot, but would leaving cheese out at room temperature for five days really be a good idea? That sounds like it would really spoil the cheese. Am I wrong about that?

Marinated Mozzarella Cubes (In a Jar!)

1 Pound Mozzarella cheese, cut into bite sized cubes
2 cups Olive Oil
1/2 teaspoon Thyme Leaves
1 teaspoon Oregano Flakes
1-1/2 teaspoons Dried Parsley Flakes
3 Cloves Garlic, minced
1/4 teaspoon. paprika
1-1/2 teaspoons dried bell pepper flakes

Combine all ingredients in a one-quart glass jar that has been sterilized
(dishwasher is fine). Cover and shake to blend. To marinate, allow to sit
AT ROOM TEMPERATURE for 5 days, shaking jar daily. After marinating, may be stored at room temperature or in the refrigerator. Yield: 1 Pound of Cheese
Chunks.
