Raeanne Thane Meat Loaf

I have a great meatloaf recipe. Even my husband enjoys it and he's very 
picky. I usually double it and make three smaller loafs since there's 
only 4 of us and one is a toddler. I cook one then freeze the other two 
mixed together and formed into loaves but unbaked. I double the sauce 
recipe, divide into thirds then freeze two portions in ziploc bags. I 
thaw the frozen loaves and sauce in the fridge for a day or two before 
baking.

 

Here's the recipe ...

 

1 lb ground beef
1 onion, chopped
1/2 can tomato sauce (8 oz.)
1 c. bread crumbs
1 egg
1 1/2 tsp salt
1/4 tsp pepper

 

Mix all ingredients together. Form into a loaf. Bake in a shallow 
baking dish with no lid. Baste with sauce 3 times while cooking. Bake 
350 for 1 hour.

 

Sauce
1/2 can tomato sauce
1 T brown sugar
1 T wet prepared mustard
1 T worstershire sauce
1 c. water
1 T vinegar

 

skim off fat and serve as gravy on baked potatoes.
