SICILIAN-STYLE MEATLOAF

INGREDIENTS: 
2 eggs beaten 
3/4 cup soft bread crumbs 
l cup tomato juice 
2 tablespoons parsley 
1/2 teaspoon oregano 
1 teaspoon salt 
ground pepper 
1 crushed clove garlic 
1 pound ground sirloin 
1 pound ground pork 
9 ounces cheese shredded (mozzarella) 
3 slices of cheese (optional) 

 

METHOD: 
Preheat oven to 350. 
Combine all ingredients except meat & cheese. 
Mix in ground beef, form 10x12 rectangle on waxed paper. Sprinkle shredded
cheese almost to edge. 
Beginning at short side, roll up meat, and seal edges and ends. Place loaf
seam side down in a baking dish. 
Bake no more than 1/14 hrs. 
If desired, place cheese slices over top and return to oven to melt. 

 

Serves 8
