Kentucky Rice Casserole "Delicious with roasts or poultry."
1 cup uncooked rice (do not use Minute Rice) 1/2 cup butter, softened 2 tablespoons chopped onion 1 (10 ounce) can beef consomme (or chicken broth) 1 (10 ounce) can condensed cream of mushroom soup (or cream of chicken soup) 1/2 cup chopped pecans Preheat oven to 350 degrees F. Mix all ingredients and pour into an ungreased 6x10-inch glass baking dish. Bake uncovered for approximately 1 hour and 15 minutes or until the center is just set. Do not over cook TO MAKE AHEAD: Can be prepared early in the day and baked when ready to serve.
