Here are 2 more that are so much better than they sound. If your husband
must have meat, add a little white meat chicken to either of these.
Spinach & Pasta
1 small onion, finely diced
1 garlic clove, minced
1 cup fresh spinach, washed and chopped or frozen in a bag.
1 tbs. chopped fresh parsley leaves
1/4 cup dry white wine
salt & pepper
1/8 tsp. ground nutmeg
4 oz. linguini
2 tbs. grated cheese
Sauté onion and garlic in nonstick pan stirring frequently.
Add chopped spinach, parsley, wine, pepper and nutmeg. cover and
simmer 5 minutes.
Cook linguini, toss with spinach sauce. Serve topped with grated
cheese.
Spicy Pepper Casserole
1 Tbs. olive oil
1 1/2 cups diced green and/or red bell peppers
1 sliced onion
1 1/2 cups mild salsa
3/4 cup crushed tomatoes
1/2 cup pitted black olives
1 1/2 cups canned garbanzo beans, rinsed and drained
Salt & red pepper (if desired)
Combine oil, peppers and onions and cook over medium heat about 5
minutes.
Reduce heat, add remaining ingredients; simmer 10 minutes.
Serve over rice
