I don't have any recipes at this time. The old thought was to take the salt shaker off the table and use much less in cooking. The new thought is to keep all salt out of cooking and use salt at the table. Apparently the taste of salt is stronger when used at the table and it doesn't get absorbed into the food. Case in point - there is the same amount of salt in 1 oz. of potato chips as in 1 slice of bread. Which one tastes salty? A rule of thumb is to stay away from prepared foods totally. Your friend is fortunate to have you in his life.

Hello everyone,

Last week, my very close friend Terry who lives with me was diagnosed with
Congestive Heart Failure. The doctor said it is absolutely crucial that he
maintain a low sodium diet. I was wondering if anyone has any recipes that
have low sodium in them? He must not go over 2,000 mg per day in sodium
content. Some of the things he can have are potato salad and tuna salad, but
I looked at the ready made ones, and they are very high, containing about
520 mg of sodium per serving, which is 1/3 of a cup. So I am looking for
ways to make things from scratch that don't contain nearly as much in
sodium. If anyone knows of any books that are available online that contain sample menus for someone on a low sodium diet to follow, please let me know
that too. I greatly appreciate any help. Thanks.
