Loaded potato Casserole

Ingredients:
  a.. 3 pounds baking potatoes, peeled and quartered 
  b.. 8 ounces light sour cream 
  c.. 1 container (4.4 ounces) light Boursin cheese with herbs and garlic 
  d.. 1/2 to 3/4 cup milk 
  e.. 6 to 8 green onions, thinly sliced 
  f.. 1 tablespoon chopped parsley 
  g.. 1/4 teaspoon freshly ground black pepper 
  h.. 1 teaspoon salt, or to taste 
  i.. 10 slices bacon, cooked, drained, and crumbled 
  j.. 8 ounces shredded sharp Cheddar cheese, divided
Preparation:
Heat oven to 350°. Butter a 2-quart baking dish. 
Cook potatoes in boiling salted water until tender, about 20 minutes. Drain 
well and mash. Stir in the sour cream, boursin cheesse, and milk, mashing until 
well blended. Stir in the green onions, parsley, salt, pepper, and crumbled 
bacon. Stir in about tow-thirds of the cheese. Spoon into the prepared baking 
dish and sprinkle with the remaining cheese. Bake for 20 to 25 minutes, until 
hot and cheese has melted.
Serves 8.
