Chocolate Matzo Rolls
8 sheets of matzo
1 cup sweet wine
7 ounces bittersweet chocolate
1/2 cup milk
2 tablespoons cocoa
1 cup sugar
7 ounces margarine
3 tablespoons brandy or orange liqueur
Crumble the matzos and pour wine over the crumbs. Chop the chocolate, add
milk, cocoa and sugar. Cook over low heat, stirring, until smooth. Remove
from heat, add margarine and brandy or liqueur. Add matzo crumbs with wine,
squeezing out excess wine. Mix well. Divide in half and roll each half like
a jelly roll, wrapping into buttered foil. Refrigerate for a few hours.
Remove foil, slice the rolls and arrange on a plate.
