Jalapeno Cheddar Beer Biscuits
2 cups flour
3 t baking powder
1 t salt
1 T Creole Seasoning
2 t garlic powder
1/4 cup shortening, cold
1/4 cup shredded sharp cheddar cheese, heaping
1-2 large Jalapeno peppers, finely diced
3/4 cup beer, at room temperature
Butter
Preheat oven to 350 degrees. In a medium bowl, whisk together flour,
baking powder, salt, garlic powder, and Creole seasoning. Cut in
shortening using a pastry blender or two knives until it has a cornmeal
consistency. Stir in cheese and jalapenos. Stir in beer a little at a
time (you may not need all of the beer) and knead lightly. On a floured
surface, pat dough to about a 1/2″ thickness. Cut with a biscuit
cutter. Bake 10-12 minutes. Brush with melted butter. Serve with more butter.
