Spicy Muffins

1 1/2 cups cottage cheese

1/2 cup wheat germ

2 tablespoons chopped chilies

1/4 teaspoon basil, dried and crushed

1/4 teaspoon oregano

1/4 teaspoon salt

4 to 6 whole wheat English muffin halves, toasted

Tomato slices

Cheddar cheese slices

Minced parsley

Combine cottage cheese, wheat germ, chilies, basil, oregano and salt and
mound on English muffin halves. On each muffin, place a slice of tomato and
criss-cross with 2 strips of sliced Cheddar cheese. Broil 3 to 4 inches from
source of heat for 5 minutes, or until cheese melts. Sprinkle with minced
parsley.

Makes 4 to 6 open faced sandwiches.
