All In One Meat Loaf

Chop your vegetables and put in the bottom of a loaf pan then top with your meatloaf mixture for a delicious all in one meal.
Ingredients:
1 large onion, chopped
1 medium carrot, chopped
1 medium celery rib chopped
1 medium potato, peeled and cut into 1 inch cubes
1  teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup saltine cracker crumbs
1 (8 ounce) can tomato sauce
1/4 cup milk
1 large egg
1 small red bell pepper, seeded and finely chopped
2 garlic cloves, minced
1/4 teaspoon Worcestershire sauce
1 1/2 pounds ground beef round
3 tablespoons ketchup
Directions:
Preheat the oven to 350 degrees. Lightly butter a 9 x 5 inch loaf pan.

Set aside /2 cup of chopped onion.  In the bottom of the
prepared loaf pan, toss the remaining onion, the carrot, the celery, potato, 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper and set the pan aside.

In a medium bowl, combine the cracker crumbs, tomato sauce, milk, bell
pepper, garlic, Italian seasoning. Worcestershire sauce, and the remaining 1/2 cup onion, 1/4 teaspoon salt, and 1/9 teaspoon pepper.
Add the ground round and knead the mixture lightly with your clean hands
until combined. Transfer it to the loaf pan, pressing the meat lightly so it adheres to the vegetables. Place the loaf pan on a baking sheet. Bake until a meat thermometer inserted in the center of the loaf reads 160 degrees, about 1 1/4 hours. Let the loaf stand 10 minutes. Drain off the excess fat, invert the meatloaf onto a platter and slice. Enjoy.
