I love experimenting with different kinds of lettuce and other salad greens. Iceberg lettuce may be the most common, but to me it has little taste and little nutrition value. Sometimes you can get bags of salad greens already bite sized and washed. Actually I wash it anyway. If you wash, then spin or pat dry greens, then put them with a paper towel in a ziplock bag. you can keep them in the refrigerator for as long as a week. My favorites are arugula and romaine or red lettuce. A Little About Lettuce Leaf lettuce has more vitamins A and C than head lettuce. Wash wilted lettuce in cold water, shake it fairly dry, cover, and put in the refrigerator. In about 12 hours, the lettuce will have freshened up surprisingly. The best way to wash a head of lettuce (also escarole and other greens that come in heads or bunches) is to fil a large bowl or pot with cold water and pump the head of lettuce, stem side up, up and down in it.
