Pace® Cha-Cha-Cha Chicken

A meal with a sense of fun! Even your kids will ask for seconds when
they taste this chicken with a sweet Asian twist. 

Serves: 4
Prep. time: 15 minutes
Cooking time: 45 minutes

- 4 boneless chicken breast halves
- 2 medium sweet onions, cut into rings
- 1 can (20 ounces) pineapple rings in juice, drained
- 1 jar (16 ounces) Pace® Picante Sauce
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons packed brown sugar
- 1 tablespoon fresh grated ginger root
- 1 tablespoon cooking sherry
- 1 teaspoon soy sauce
- 2 cups hot cooked rice, regular white or jasmine rice

LINE shallow baking pan with aluminum foil. Place chicken in prepared
pan.
TOP with onions and pineapple. Mix picante sauce, cilantro, brown sugar,
gingerroot, sherry and soy and pour over all. Top with foil and seal
edges.
BAKE at 350°F. for 45 min. or until done. Serve with rice. Garnish
with additional cilantro, if desired. Serves 4.
