Brush or wipe your GFG with cooking oil and preheat. Please do not use an aerosol spray. Your grill will last longer, and will thank-you for it. It will also help the environment. In a nonstick skillet, heat oil over medium-high heat. Add green pepper and onion; sauté until heated through, 3-4 minutes. Transfer to a plate and keep warm. In the same pan, melt the 2 tsp. butter over medium heat. Add eggs, salt and pepper; scramble until eggs are desired consistency. Remove from heat and stir in ham mixture. Brush one side of each bread slice with melted butter. Place on a work surface, buttered side down. Divide eggs evenly between two bread slices and top with cheese. Cover with top halves and press gently to pack. Place sandwiches in grill, close the lid and cook until golden brown, 3-4 minutes.
