Orange Brilliance

4 to 5 seedless oranges, naval

2 teaspoons grated lemon rind

2 tablespoons lemon juice

3 to 4 tablespoons granulated sugar

1/4 teaspoon ground ginger or 1 tablespoon minced candied ginger

Slice off all peel and white membrane from oranges. With a sharp knife, cut crosswise into thin slices, about 1/4 inch thick. Place in a large serving dish, spreading out as much as possible. Sprinkle the lemon rind and lemon juice over oranges. Combine the sugar and ground ginger or candied ginger. Sprinkle over oranges. Let stand in refrigerator for several hours, basting with juice. Can be covered and refrigerated overnight.

Good served with:

A Chinese meal or roast pork (marinated in soy sauce), rice.

Makes 4 servings.
