FRESH SPRING SALAD

?   2 c. spring salad (Safeway carries a mixture of lettuces premixed called 
"Spring Salad")
?   1 c. regular head lettuce
?   8 oz. feta cheese, crumbled
?   1/2 c. chopped and toasted black walnuts
?   2 fresh nectarines or peaches or mandarin oranges
?   1 sm. red onion, sliced thin (optional)
?   1/2 c. raspberry-walnut dressing (recipe below or bottled)
?   1/4 c. walnut oil or good olive oil

Mix all lettuces with feta cheese and nuts. Slice fruit small wedges and put in 
salad. Pour raspberry dressing over salad when ready to serve and then toss 
again with oil. Serve immediately. 
For dressing, whisk together 3 tablespoons raspberry vinegar, 3 tablespoons 
freshly squeezed orange juice, 3 tablespoons French walnut oil and 1 tablespoon 
coarse-grain mustard. Stir in either teaspoon dried tarragon leaves and 1 
teaspoon to 2 teaspoons finely slivered fresh mint leaves, or 2 teaspoons 
chopped, fresh tarragon leaves.
