Grandma's Chocolate Pudding
3/4 cup whipping cream
3/4 cup milk
3 tablespoons granulated sugar
1 cup semi-sweet chocolate chips
3 egg yolks
1 1/2 teaspoons vanilla
Whipped cream, for garnish
Chocolate sprinkles, for garnish
In a saucepan, combine the cream, milk, sugar and chocolate chips. Stir over
medium heat until chocolate is melted and mixture just comes to a boil. In a
small bowl, beat the egg yolks and vanilla until blended. Stir the hot
mixture into the egg yolk mixture. Return to the saucepan. Cook, stirring
until thickened. Strain into 4 dessert dishes. Cover and chill thoroughly.
Serve garnished with whipped cream and chocolate sprinkles.
Tips:
This dessert can be made a day in advance and can be chilled in individual
serving dishes, covered with plastic wrap. For a white chocolate pudding,
substitute white chocolate chips for the semi-sweet chocolate chips.
Microwave Directions:

In a 1 quart glass measuring bowl, combine the cream, milk, sugar and
chocolate chips. Microwave on high for 2 to 3 minutes until steaming hot,
stirring after 1 1/2 minutes. Beat egg yolks and vanilla until blended.
Gradually mix chocolate mixture into the egg yolks, whisking until mixture
is smoothe. Strain into 4 individual serving dishes. Chill thoroughly. Serve
garnished with whipped cream and/or strawberries.
Makes 4 servings.
