Blueberry Pecan Squares

1/2 cup brown sugar

1/2 cup granulated sugar

2 eggs

3/4 cup corn oil

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup grated zucchini

1 1/2 cups fresh blueberries

3/4 cup coarsely chopped pecans

1/4 cup powdered sugar, sifted

Beat together the brown sugar, granulated sugar, eggs and corn oil. Sift dry ingredients. Add to sugar and egg mixture. Stir in zucchini, blueberries and pecans. Pour batter into a greased 13 by 9 inch baking pan. Bake at 350 degrees for 20 to 25 minutes, or until a cake tester inserted in center comes out clean. Cool completely on a wire rack. Cut into squares. Dust with powdered sugar. Serve with vanilla ice cream, if desired.

Microwave Directions:

Beat together the brown sugar, granulated sugar, eggs and corn oil. Sift dry ingredients. Add to sugar and egg mixture. Stir in zucchini, blueberries and pecans. Pour batter into a greased 13 by 9 inch microsafe baking dish. Microwave on high for 8 to 12 minutes, or until done. Let stand to completely cool before cutting into bars. Dust with powdered sugar. Serve with vanilla ice cream, if desired.

Makes 20 to 24 squares.
