Potato Cheddar Casserole

4 cups peeled, sliced potatoes, about 4 large potatoes

1 large onion, sliced

1 cup sour cream

1/2 cup milk

1/2 teaspoon salt

1/2 teaspoon curry powder

1 cup shredded sharp Cheddar cheese

Alternate the sliced potatoes and onions in a 2 quart casserole. Mix the sour cream, milk, salt and curry powder. Pour over the potatoes. Cover. Bake at 350 degrees for 1 hour, or until potatoes are tender. Sprinkle with the Cheddar cheese. Bake just long enough to melt the cheese. Serve hot.

Tips:

If you'd like, this side dish can be easily turned into a light entree. Just double the cheese and serve it with a fresh tossed salad.

Microwave Directions:

4 cups peeled, sliced potatoes, about 4 large potatoes

1 medium onion, sliced

2 tablespoons water

1 cup sour cream

1/2 teaspoon salt

1/2 teaspoon curry powder

1 cup shredded sharp Cheddar cheese

In a 2 quart glass casserole, combine the potatoes and onions. Cover with plastic wrap. Microwave on high for 8 to 12 minutes until the potatoes are tender. Combine the sour cream, salt and curry powder. Pour mixture over potatoes. Top with the shredded cheese. Microwave, uncovered, on high for 3 to 5 minutes until the cheese is melted. Serve hot.

Makes 4 servings.
