Well! My chicken salad never comes out the same way twice. Generally, here is what I do. I start with about two cups cooked chicken, dice it up small, add some chopped onion, a good size stalk of celery, some red or green grapes, if I have them, (cut in half) or, some dried cranberries, sliced almonds, or chopped apple, about 1/4 teaspoon curry powder, a little diced crystallized ginger, and enough mayonnaise to hold it all together. If I have orange juice, I may add about a tablespoon. I sometimes do chicken salad without the curry and ginger, just with celery, onion and mayonnaise, adding a little salt and pepper.
If you want to, you can add a can of Mandarin oranges instead of the grapes.
I've also done this with leftover turkey with equally good results.
