Claudia,

If you are seeking those recipes which utilize a barbecue grill, then
just delete this message without even reading it. Oh, I love food
done on a grill, ... as long as I'm not the one who must tend to the
task! I most often use a 3-pound cut-up chicken, but I also use leg
quarters, (which is the leg and thigh attached). Here is my lazy
recipe:

1 3-pound chicken, cut-up, or 6 leg quarters
Spike or seasoned salt
Black pepper
Onion Powder
Sweet basil
Barbecue sauce, such as Bull's Eye Hickory
BItalian bread crumbs

Thoroughly wash and pat dry the chicken. Season both sides to taste
with above-listed seasonings, but be gentle with the use of sweet
basil, so it doesn't overpower the other flavors. I use only about
1/4 teaspoon for the entire chicken. Line a roasting pan or cake pan
with three or four sheets of foil. Spray liberally with cooking
spray. Place chicken, skin-side up, on the foil. Thoroughly coat
with barbecue sauce, and don't worry about the sauce slopping onto the
foil. I usually put enough sauce on so there is about a half-inch of
sauce on the foil. Lightly coat with Italian bread crumbs. Bake,
uncovered, in a 400-degree oven for one hor. Turn off oven, and let
the chicken sit in there for about ten to fifteen minutes; it will
reabsorb some of the liquid and be very juicy. The bread crumbs will
give it just a bit of crustiness.
