Barbecued Chicken Breasts

 

4 whole boneless chicken breasts, halved

 

For Marinade:

 

4 tablespoons oil

4 tablespoons soy sauce

2 tablespoons lemon juice

1 tablespoon brown sugar

2 cloves garlic, minced or pressed

1 teaspoon dried thyme or basil leaves

3 whole cloves

Dash pepper

 

Method

 

1. Wash chicken breasts, pat dry. 

2. For marinade, blend together oil, soy sauce, lemon juice and brown sugar. 

3. Place chicken breasts in a single layer in a glass dish. 

4. Sprinkle with garlic, pepper, thyme or basil leaves and cloves.

5. Pour marinade over chicken. 

6. Let stand in refrigerator for at least 4 hours, turning breasts over from 
time to time. 

7. Preheat barbecue grill. 

8. Place chicken breasts on grill, a few at a time. 

9. Baste with marinade. Grill for about 5 minutes on one side. 

10. Turn over. 

11. Grill for another 5 to 9 minutes on other side until chicken is fork 
tender, juices run clear when pierced with a fork and chicken is lightly 
browned. 

12. Don't overcook. 

13. Garnish with fresh thyme or basil leaves or with parsley. 

14. Makes 4 servings.
