I have the same to mixers the kitchen aid stand mixer and the kitchen aid
portable mixer. I think if you have minimal hand strength, these mixers
would be the two for you to get.

My favorite mixer has just one bowl. It's a 5-qt. stainless steel mixing
bowl, and it belogs to the KitchenAid stand mixer. There is just about
nothing one cannot do with this mixer. I have had mine for many years,
and I love it! It even kneads bread very effectively.
I also have an even older Kitchen Aid portable mixer. It is perfect for
making mashed potatoes in the pan one has cooked the potatoes in. It is
easy to put the beaters in and out.
