Ingredients
a.. 1 package(s) turkey, giblets, (from a 10-12-pound turkey)
b.. 1 whole turkey, neck, (from a 10-12-pound turkey)
c.. 6 cup(s) water
d.. 1 medium onion(s)
e.. 1 medium carrot(s), chopped
f.. 1 stalk(s) celery, chopped
g.. 1 whole bay leaf
h.. 1 sprig(s) thyme, fresh
i.. 1 tablespoon peppercorns, black, whole
Preparation
1. Combine neck and giblets (except liver), water, onion, carrot and celery
in a large saucepan; bring to a boil. Add bay leaf, thyme and peppercorns.
2. Reduce heat and simmer, skimming and discarding any foam, for 1 hour.
3. Strain stock through a fine-mesh sieve into a medium bowl and let cool.
Discard solids
