Here is another very simple peanut butter cookie recipe with a cake mix.
1 yellow cake mix
2 eggs
1/2 Cup or oil
1 Cup of peanut butter, your choice of creamy or crunchy
Mix eggs, oil, and peanut butter in to bowl with the dry cake mix.
Stir and blend well. This will be very thick, so after blended as best you
can, I use my hands and work the dough good to make sure, all the dry cake
mix is mixed into the dough well.
Pinch off dough, and roll into balls about the size of a wal nut.
place on cookie sheet far enough apart to allow them to spread out some
when baking. You can also take a fork and press the balls a little one way
and then the other way to make a criss cross on top of them, this is more
for looks of the cookie, not necessary unless you desire too. Place in a
350 degree oven and bake around 8 minutes, or till very lightly brown
around edges. I like cookies soft, so usually take them out before they
get to brown stage. They will feel doughy if you very light take finger and
touch cookie, but when cooled they will be soft but more firmer.

Peanut Butter Cookies
1 cup smooth peanut butter
1 cup granulated sugar or
1/2 cup granulated and 1/2 cup brown
1 egg
1 teaspoon vanilla
Dash of salt
Preheat oven to 325 degrees. Mix all ingredients until well blended. Roll
into small balls. Place on an ungreased cookie sheet, 1 inch apart. Press
lightly with a fork to flatten. Bake for 15 to 20 minutes.
YIELDS: 1-1/2 dozen cookies
