Crockpot Meatloaf and Veggies

Makes 8 servings

Meatloaf in crockpot with cut veggies

Ingredients

- 8 small red potatoes, sliced

- 12 oz baby carrots

- 1 yam, large

- 1 pound ground beef

- 3/4 cup bread crumbs

- 1/3 cup ketchup

- 1/3 cup onions, chopped

- 2 eggs, beaten well

- 1/4 tspn salt

- 1/4 tspn pepper

Directions

cut potatoes and yam, place in crock pot, add carrots

Mix remaining ingredients together, form a loaf and set on top of

veggies in crockpot, making sure it's not touching the sides of

crockpot.

Cook on High 3-4 hours or Low 7-9 hours
