I just use the ice water, no potato slice, and it works just great!

Here's an interesting tip I read in today's Epicurious blog. I have
not tried it, and I'm also wondering how I might use the rest of the
potato from which only one slice is removed to save wilted celery or
carrots or radishes, but here it is for what it's worth. Let us know
if this works for you!
When radishes, celery, or carrots have lost their crunch, simply pop
them in a bowl of iced water along with a slice of raw potato and
watch the limp vegetables freshen up right before your eyes.
