HAM-RICE-TOMATO BAKE 2 cups cooked diced ham 1 cup cooked rice 1/2 cup chopped onion 1/4 cup chopped green bell pepper 4 oz can mushroom stems and pieces, drained 16 oz can stewed tomatoes, chopped but undrained 1/4 tsp salt 1/4 tsp ground black pepper 1 cup soft breadcrumbs 1/4 cup butter or margarine, melted
In a large mixing bowl, combine all ingredients except breadcrumbs and melted butter. Mix well. Spoon into a greased 2-quart casserole. Combine breadcrumbs and melted butter; toss to mix well. Sprinkle on top of casserole. Bake, uncovered, at 350*F for 30 minutes. Yield: 4 servings. Later.
