I'm reading with interest, the recipe suggestions for your bachelor friend.  If 
he were to make a pot of soup, or stew, he could then freeze it in portions to 
have for later.  
You can also vary the chicken and mushroom soup with celery soup, omitting the 
Parmesan cheese and adding some garlic.  This is very good served over rice.  
It was a family favorite growing up.
Another idea is what I call my "mindless meal".  
On a baking sheet: place a chicken breast, or any piece of chicken you like, or 
a pork chop, surround this with any vegetables you like, such as a Vidalia 
onion, quartered, a quartered potato, some zucchini, carrots, mushrooms, 
peppers.
Coat all of these with a little oil and season as desired with herbs, salt and 
pepper.
Bake all of this at 400 for about 45 minutes.  It makes a wonderful dinner.
