Meatloaf Spaghetti

Source : Linda Larsen, Your About.com Guide To Busy Cooks

Meatloaf Spaghetti is a super simple four ingredient recipe that
disguises leftover meatloaf in a wonderful way.
One of the nicest things about this recipe is that you can stretch just
a few slices of meatloaf to serve another four (or more!) people.
I made it using My Mom's Meatloaf.
You can also use any leftover cooked ground meat.
Or if you want to make the recipe but don't have leftover meatloaf,
brown 1/2 to 1 pound of ground meat with 1 chopped onion.
Then add the pasta sauce and continue with the recipe.

Prep Time: 5 minutes Cook Time: 12 minutes

Ingredients:

16 ounce package spaghetti or linguine pasta
leftover meatloaf, any quantity
26-ounce jar pasta sauce
1/3 cup water
1/2 cup shredded Parmesan or Romano cheese

Preparation:

Bring a large pot of salted water to a boil.
Meanwhile, cut meatloaf into small pieces and combine in large skillet
with pasta sauce.
Rinse pasta sauce jar out with the water and add that to skillet.
Place over medium heat and bring to a simmer, stirring frequently.
Cook pasta according to package directions until al dente.
Drain, then place on serving platter.
Top with pasta sauce/meatloaf mix and shredded cheese and serve
immediately.Serves 4 to 6. Enjoy.
