Hi, I found another one in my collection.

Mandarin Muffins

 

1 11 ounce can mandarin orange segments

1 tb orange extract

2 cups all-purpose flour

2 tsps baking powder

½ tsp baking soda

½ tsp salt

½ cup light or dark brown sugar, (firmly packed)

¼ cup white sugar

1 egg, well-beaten

1 8 ounce carton sour cream

1/3 cup vegetable shortening, (melted)

½ cup chopped pecans.

 

Method

 

1. Drain the orange segments.

2. Reserve the liquid.

3. Cut the orange segments into halves and place in a measuring cup.

4. Add the orange extract and enough reserved liquid to make 8 ounces, (1 cup).

5. Set aside.

6. Combine the flour, baking powder, baking soda, salt and the sugars in a 
large bowl.

7. In a separate bowl, combine the egg, sour cream, orange mixture and 

the melted shortening.

8. Make a well in the center of the dry ingredients.

9. Add the orange and the pecans.

10. Stir just until moistened.

11. Pour into muffin paper-lined cups or greased muffin cups about two thirds 
full.

12. Bake in a preheated 400 degree oven for 20 or 25 minutes.

13. Makes 1 and 1/2 dozen muffins.
