I also read somewhere, that you could lay bread slices on a cookie sheet, in a cold oven overnight and just let the bread dry out that way.

Here's something else I found that I had.
Homemade Croutons

4 cups 1/2-inch chunks stale bread
4 tablespoons butter, melted (see Option)
1 tablespoon grated Parmesan cheese
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Preheat the oven to 375 degrees.

Place the bread chunks in a medium bowl.

In a small bowl, combine the remaining ingredients.

Lightly toss the bread chunks with the butter mixture then place on a large rimmed baking sheet.

Bake for 15 to 20 minutes, or until lightly browned and crunchy throughout.

Let cool then store in an airtight container until ready to use.
OPTION: If you'd prefer, you can use 4 tablespoons olive oil in place of the butter.

Recipe makes 4 cups.

All-Purpose Croutons

b.. 3 tablespoons unsalted butter, melted

 c.. kosher salt

d.. 2 teaspoons dried herbs (such as oregano, thyme, basil, or an Italian
herb mix)

2.. Cut the buns into 1-inch pieces and place on a baking sheet lined with
parchment paper or aluminum foil.

3.. Drizzle with the butter, sprinkle with 1/2 teaspoon salt and the
herbs, and toss. Bake, turning once, until crisp and golden, about 15
minutes.

4.. Transfer the sheet of parchment or foil and croutons off the pan to a

the refrigerator for up to 5 days or in the freezer for up to 3 months.)
Serves 4.

Subject: [CnD] Making Breadcrumbs

Oven Dried Bread

Elizabeth Yetter
Making your own homemade crumbs is inexpensive and thrifty. Not only do you save yourself money by not having to buy store crumbs, you also stop wasting good pieces of leftover bread. To dry leftover bread slices and ends for making crumbs, preheat oven to 250 degrees F. Next, lay out bread slices on a
baking or cookie sheet. Place in oven.

Turn the bread slices every 10 to 15 minutes to prevent burning. When the bread slices are dry, remove from oven and set aside to cool.

Rolling Pin Crumbs

Years ago, the way to make crumbs was to put dried bread, crackers, or even breakfast cereal in a clean paper or plastic bag and then manually use the rolling pin. This is still a favorite method for many of us because it cuts down having to clean a food processor or blender.

To make bread crumbs using this method, break the dried bread into chunks with your hands. Place the chunks of bread in a plastic bag. Flatten the bag to remove excess air and seal shut. Use a rolling pin to roll over the dried bread. The longer you roll, the finer the bread crumbs.

When finished, store the bread crumbs in a plastic container until you are ready to use them.

Freezing Leftover Bread

Elizabeth Yetter
As a bread baker you will quickly discover that there is often leftover slices of bread, bread crusts, or bread ends. Instead of feeding these bits to the
birds, freeze them for later use.

To freeze the leftover bread, simply keep a "leftovers" bag in your freezer. As you come across leftover bread ends or even slices, simply put the unused,
leftover bread in the freezer bag.

When you have filled the bag with leftovers, pull it out, and begin drying the bread to make bread crumbs.
