Coca Cola DATE NUT BREAD
Makes one loaf. Ingredients: 1 package, (8 ounces) pitted dates 1 ¼ cup coca cola 1 cup firmly packed light brown sugar 2TBS oil 2 cups all-purpose flour 1tsp baking powder 1 tsp baking soda 1 egg 1 tsp vanilla extract ½ cup chopped walnuts or pecans 1.. Chop dates. Heat coca cola to a boil. Remove from heat and stir in dates, mix very well. 2.. Stir in sugar and oil. Let cool while preparing other ingredients. Lightly spoon flour into cup to measure. Stir together, the flour, baking powder and baking soda. Add to dates, mix thoroughly. Stir in well-beaten egg, vanilla and nuts. 3.. Pour into a greased and floured 9 by 5 by 3 inch loaf pan. Bake in a 350 degree oven about 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan, set on rack, for 20 minutes. 4.. Remove loaf from pan, set on rack, top side up.
