Sure! Mix a little flour and salt with them and when you get a doughy
consistency, make potato pancakes out of them. Those are the German
version of potato pancakes, and usually eaten with applesauce on the
side. Cottage cheese with a bit of scallion or sour cream are also
possible sides.
Another idea is potato candy. If you have enough mashed potatoes as
would have come from one potato, mix 1 box of brown sugar with them and
they'll go liquid on you. So pour brown sugar in from a second box
until they turn into a dough add 1/4 teaspoon of vanilla to the dough.
Wrap the dough in waxed paper and roll it
out tabout 1/4 or 1/8 inch thick and in the shape for a jelly roll.
Then put peanutbutter down the whole length of the roll. Roll the dough
up around the peanutbutter, and refrigerate for an hour. It likely
will taste like peanutbutter fudge.
