Eggnog Muffins Source: Country Store Catalog
3 c all-purpose flour 1/2 c sugar 3 tsp baking powder 1/2 tsp salt 1/2 tsp ground nutmeg 1 egg 1 3/4 c eggnog commercially prepared eggnog 1/2 c vegetable oil 1/2 c golden raisins 1/2 c chopped pecans In lg bowl, combine 1st 5 ingredients. In 2nd bowl, combine egg, eggnog & oil; stir into dry ingredients just until moistened. Fold in raisins & pecans. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350°F 20-25 min or until toothpick comes out clean. Cool 5 min before removing from pans to wire rack. 16 muffins
