I love this cake, but I like mincemeat.
Mince Meat Cake
1 22 ounce jar mincemeat
1 ½ cup white sugar
3 eggs
1 cup oil
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoon cinnamon
½ teaspoon all spice
½ cup chopped nuts optional
Cream butter and sugar
Add eggs and oil
Add dry ingredients alternately with mince meat
Fold in nuts
Pour in 9 by 13 greased pan or larger
Bake at 350 degrees for 35 to 40 minutes
FROSTING
1/4 Cup butter softened,
4 OUNCES cream cheese softened,
1 Cup powdered sugar,
1 TEASPOON vanilla,
Combine butter, cream cheese, powdered sugar and vanilla until the mixture
is creamy.
