Hi, this is what I did for new year's, a take-off from what someone brought to work once:

I used:
2 32-ounce pkgs sauer kraut
1 I believe it's a one-pound package of Eckrich kielbasa (it has two sausages), chopped,

one onion chopped,
4 cloves garlic, chopped (I'm a garlic fan)
2 cups water, I'd say,
1 cup apple juice, or, if you don't have that, a little sugar to taste,
pepper to taste.

You drain the sauer kraut in a collander into a bowl, rinse the sauer kraut some, place half of it in like a three-quart pan, mix in a little pepper, pour on 1 cup of water and a little bit of the sauer kraut juice, top with half of the onion, sausage, and garlic, then top with the remaining sauerkraut, some more pepper, and the rest of the garlic, sausage, onion and water. Bring to a boil, then turn heat to low, and let cook, covered, for 2/1/2 to three hours, depending on how it tastes to you.


In all, used two 32-ounce bags of sauerkraut. I placed the contents of the first bag over a collander I had with a bowl to let the juice drain into, then rinsed the sauer kraut some, and put in I'd say a three-quart saucepan with a cup of water.
